Waira Tamba Ume Salt
The seawater of Kotobiki in Tango, Kyoto by the Sea, is extremely transparent and contains few impurities. Highlighting the natural sea salt, after much experimentation, a variation with locally sourced Japanese yuzu makes for a heavenly combination. It goes well with tempura, nigiri sushi, sashimi, and grilled fish. The possibilities are endless.
